Spinach, Roasted Walnut & Goat Cheese Salad with Bagdad Dill & Lime Dressing
1 bag of baby spinach leaves (available from the vegie section at your local supermarket)
100g walnuts, roasted in the oven at 180c for 3-4 mins. on the middle shelf of oven
100g Meredith Dairy Marinated Goat Cheese, broken into small pieces
Bagdad Dill & lime Dressing
Toss the spinach, roasted walnuts and goat cheese together with about 2-3 tbspns of Bagdad Dill & Lime Dressing, just enough to coat all of the ingredients.
Voila! One tasty, quick and easy salad!
You could substitute blue cheese for the goat cheese, or brie or camembert if you prefer.
You could also substitue macadamia nuts or almonds for the walnuts.
